All depends which castles, I guess. A lot of the castles were inhabited by nobility (who weren't always necessarily loyal to the crown in England and then Britain) when Ireland was under British rule. If I remember correctly, the Normans built a fair amount to show their power when they crossed the Channel and tried to extend their influence across the Irish sea. The British crown still has the technical power to grant peerages in Ireland, but after independence it really hasn't been exercised outside of Northern Ireland, which remains part of the UK.
